Slow Cooker Cilantro Lime Chicken

Just a warning, I’m going to try and cram in as many tex-mex inspired meals as I can for Cinco De Mayo.

Like this one! This chicken dish is convenient, affordable, and definitely tasty. It should be a go-to dinner/lunch for any busy person that doesn’t have time to prepare a home cooked meal every night. Just my two cents.

Slow Cooker Cilantro Lime Chicken:
Adapted from All Recipes
Ingredients: (serves 8-10)
1 (16 ounce) jar salsa
1 (1.25 ounce) package dry taco seasoning mix
2 limes, juiced
3-4 tablespoons chopped fresh cilantro
3 pounds skinless, boneless chicken breast halves
Directions:
Place the salsa, taco seasoning, lime juice, and cilantro into a slow cooker, and stir to combine. Add the chicken breasts, and stir to coat with the salsa mixture. Cover the cooker, set to High, and cook until the chicken is very tender, about 4 hours. If desired, set cooker to Low and cook 6 to 8 hours. Shred chicken with 2 forks and serve with black beans, rice, and cheese if desired.

This ones a keeper.

  5. That is without a doubt one of the most vibrant chicken dishes I’ve ever seen, it just screams freshness! Looks absolutely delicious :-)
